Bend has no shortage of places to drink. Breweries on every corner, cocktail bars downtown, tasting rooms in the Old Mill. But if you ask a local where to find a real speakeasy, low lights, jazz on the air, a hidden room behind a bookcase, they’ll point you twenty minutes up Highway 97.
We’re Gompers Distillery & Speakeasy, in Redmond. And we’d love to let you in.
What makes it a real speakeasy?
Plenty of bars borrow the word. Ours earns it.
Step through the door and it’s 1922: vintage leather couches, Prohibition-era cocktails, and spirits distilled about thirty feet from your barstool. There’s a hidden room, too but you’ll have to come find that part out for yourself.
This isn’t a corporate concept. It’s a family, woman, and veteran-owned distillery we built ourselves, named for our Opa, Herman Gompers, a Dutch Holocaust survivor who became a legendary Los Angeles baker and lived by one rule: don’t be ordinary. Every pour in the room honors that.
What to order
Start with a tasting flight. It’s the best way to meet the lineup: our American Style Gin with hand-picked Oregon juniper, golden pear, and Central Oregon lavender; our bold 115-proof Navy Strength; our Old Tom Gin aged in Willamette Valley Pinot Noir barrels; and our eleven-times-distilled Vodka. Everything is made with Cascade Mountain water filtered through volcanic lava rock.
Then go for the mini cocktails. Our menu is a tour of the Prohibition era in small pours, so you can sip your way through the evening instead of committing to just one.
And don’t skip the tostis. Dutch style grilled sandwiches, a nod to Herman’s roots and the baker who started it all.
Perfect after Smith Rock
Here’s the move locals know: we’re about ten minutes from Smith Rock State Park. Hike Misery Ridge in the afternoon, then trade the dust for dim lights and a cold gin cocktail. There may be no better reward in Central Oregon.
Coming from Bend? We’re a straight shot up Highway 97, about twenty minutes, and an easy add-on to a day at Smith Rock, the High Desert Museum, or anywhere north of town.
